This easy crock pot ham and potatoes recipe is a great way to use leftover ham from your fridge or freezer, and the ingredients are simple. Need an easy recipe? Easy Crock Pot Ham and Potatoes Equipment
Before I list the ingredients, I have to give my trusty crock pot a nod. Whether you call it a crock pot or a slow cooker, the result is the same. I always look forward to coming home at the end of a day's work and knowing that dinner is ready. Also, the house usually smells amazing. That's why I use my crock pot at least once a week. I usually gather the ingredients on Sunday night, put the crock pot in the fridge overnight, and then start the cooking process Monday morning. It's one of my favorite organizational strategies to help me start my week off right. If you don't have a potThis is a good choice.
I like to use one that's big enough to prep extra so we have leftovers for another meal if possible, so I go with the 6 liter size. A programmable timer is also nice for recipes that don't take a whole day to cook. With this model, for example, it is possible to set the saucepan so that it starts cooking at noon.
Instant pot lovers, this recipe may be for you too
Of course, this recipe can be made in an Instant Pot if the pot is set to the slow cooker option. It's a very useful device. This makes yogurt or rice. It's a pressure cooker and slow cooker in one. I've heard people rave about them. I'm just not sure I would use all the features enough to justify the cost. If you have an instant pot and love it, I'm open to being convinced to get one. Easy Crock Pot Ham and Potato Ingredients
1 32-ounce package O'Brien Frozen Potatoes
1 15.25-ounce can corn, drained or 1 cup zucchini, shredded and drained (optional)
3 cups chopped cooked ham
1 8-ounce package cream cheese, softened
1 1/2 cups milk
2 1/2 tablespoons Dijon mustard
1 1/2 cups chopped green onions (divided)
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Grease a Dutch oven (4 quart or larger) or spray with non-stick cooking spray. One of myFavorite kitchen shortcuts(I have many) consists of taking a used casing from a stick of butter and then adding butter flavored shortening to the casing to grease a bowl. I keep a special little basket in my fridge to store folded wrappers so they're ready when I need them.
In the prepared crock pot, combine Potatoes O'Brien with corn (or zucchini) and ham. Stir to mix well
In a 1 liter glass bowl, combine cream cheese and milk. Microwave for 1 to 1 1/2 minutes, then whisk. Stir in mustard, 1 cup scallions, garlic powder, and pepper until combined. Pour the cream cheese mixture evenly over the potatoes, vegetables and ham; not to be confused.
Cover and cook over low heat for 5 hours or until potatoes are tender. Stir gently. Scatter remaining 1/2 cup of scallions on top and serve.

Cheesy Crock Pot Ham and Potatoes Variation
To make cheesy crock pot ham and potatoes, just add some shredded cheddar cheese. Sprinkle 1/2 cup grated cheese over the pot potatoes and ham after they're done cooking. Put the lid back on the potatoes, then wait about 5 minutes for the cheese to melt. Presto! Now you have doneCrockpot cheese potatoes and ham. You can always sprinkle the scallions on top after the cheese has melted for some extra color in this Crock Pot Cheese Potato Ham Casserole.

Did you notice that the corn and zucchini added to the recipe are optional? As mentioned, I'm a big fan of sneaking extra veggies into food. Some other ways to sneak extra veggies into crock pot ham and potatoes are adding some dried kale or stirring in some cooked green beans towards the end of the cooking time. Turn up the spice level a bit by adding a chopped and seeded jalapeno pepper in addition to the paprika in the O'Brien potatoes. You're going to have a slow cooker ham and potato dinner for your family, and they might not even realize the extra veggies are in it.

However, Crock Pot Ham and Potatoes O'Brien isn't the only way to make this recipe. There are other Hash Brown varieties that you can use. You could add one large red bell pepper, chopped, and one medium onion, chopped, to a bag of frozen diced hash browns. You could try using shredded hash browns or shredding hash brown patties if that was all you had to work with. The taste would be the same but the texture could be different.
